Turkish Cheese and Dairy Products

Turkish cheese and dairy is far broader than the feta style block most people know. This collection covers beyaz peynir white cheese in full fat and light, aged kasar for toasting and tost, stringy dil and orgu cheeses, sharp tulum matured in skin, herbed otlu peynir from the east, plus butter, kaymak clotted cream, ayran and thick strained yoghurt. Between them they cover a Turkish breakfast table, a borek filling, a pide topping and a dessert plate served with honey and walnuts.

Serving Turkish cheese well

Take cheese out of the fridge thirty minutes before eating, since cold suppresses aroma completely. Very salty white cheese can be soaked in cold water or milk for an hour to soften the edge. Kasar melts best when grated cold and used quickly, and any cut cheese should be wrapped in paper rather than plastic film so it can breathe.
