Turkish pasta shapes and how to cook them

Turkish pasta and noodles include shapes that rarely appear elsewhere: tiny eriste egg noodles cut by hand, arpa sehriye orzo used in pilav and soup, tel sehriye vermicelli toasted in butter before rice is added, and manti dumplings the size of a fingernail. Alongside these you will find familiar spaghetti, penne and macaroni produced by Turkish mills from durum wheat.

Salt the water properly, around ten grams per litre, and never add oil, which stops sauce clinging. Toast vermicelli in butter until it turns hazelnut brown before adding rice, and dress manti with garlic yoghurt and melted butter with pul biber rather than tomato sauce.
