Turkish Condiments and Sauces

Condiments and sauces are where a Turkish kitchen gets its personality. Using pomegranate molasses

Pomegranate molasses is the single most useful bottle here. A spoonful with olive oil, salt and lemon makes the standard Turkish salad dressing; brushed onto lamb or chicken in the last minutes of cooking it caramelises into a sharp glaze. Store it in the cupboard and shake before use, as it thickens with time.
