Serving and storing baklava

Always serve baklava at room temperature, since refrigeration sets the butter and syrup and turns crisp layers heavy. Keep the tray covered at cool room temperature and eat it within about five days, or freeze it whole and reheat briefly in a moderate oven to bring the pastry back to life.
