Turkish Sucuk, the Garlic Beef Sausage

Sucuk is the dry cured beef sausage that defines a Turkish weekend breakfast, seasoned heavily with garlic, cumin, sumac and red pepper and then fermented and air dried. This collection carries mild and hot sucuk in rings and sliced packs, halal certified, from several established producers. Good sucuk is firm rather than soft, deep red rather than pink, and renders a generous amount of aromatic fat the moment it hits a warm pan, which is exactly what makes sucuklu yumurta so good.

Cooking sucuk properly

Slice it about half a centimetre thick, lay the pieces in a cold dry pan and bring the heat up gradually so the fat renders slowly and the edges curl and crisp. Never add oil. Crack eggs straight into the rendered fat, or use the same pan for menemen, pide topping or a simple bean stew.
